Pumpkin Soup

Warm Pumpkin Soup for Cold Fall Nights

Pumpkin Soup

Ingredients:
• 1 tablespoon olive oil
• 1 small onion, diced
• 2 Granny Smith apples, peeled, cored and diced
• ½ teaspoon kosher salt
• 6 cups vegetable stock
• 2/3 cups natural (no sugar added) applesauce
• ½ teaspoon ground white pepper
• ½ teaspoon ground sage
• ½ teaspoon dried thyme
• ¼ teaspoon ground nutmeg
• 2 (15-ounce) cans pumpkin
• ¼ cup brown sugar
• ½ cup heavy cream

Directions:
1. Heat a Dutch oven or large soup pot over medium heat. Add the olive oil and heat until it shimmers. Add the diced onion, apples and salt. Sauté until onions are translucent, about 7 minutes. Add the vegetable stock, applesauce, white pepper, sage, thyme and nutmeg. Bring to a boil and cook until apples are very tender, about 5 more minutes.
2. Add the pumpkin and brown sugar and cook for 10 – 15 minutes over medium heat. Use an immersion blender to blend soup until it’s smooth. (You can also use a blender to blend the soup in batches.) Add the cream to the soup and heat through over very low heat. (You can add more cream or water, if desired, to thin out more.) Remove from heat and serve. Garnish with sliced pumpkin seeds or dried apple slices.

 

 

Apple Cobbler

Apple Cobbler

 

 

 

Ingredients:
• Peeled, cored, and sliced apples (enough to half-fill a 9×13 baking dish)
• 4 tsp. vanilla (divided)
• 3 cups sugar (divided)
• 1 tsp. cinnamon
• 1 1/3 cup butter, melted and cooled
• 2 egg
• 2 cup flour
• 1/2 tsp. baking powder
• Pinch of salt
• Caramel sauce

Directions:
1. Preheat Oven to 350 degrees.
2. Butter the bottom of a 9×13 baking dish. In the bottom of the prepared baking dish, put in enough apple slices so that the dish is half-full. Sprinkle the apples with 2 tsp. of the vanilla. Then sprinkle 1 cup of the sugar and 1 tsp. of cinnamon evenly over the apples.
3. Combine the melted butter, 2 eggs, and the remaining 2 tsp. of vanilla. Add the remaining 2 cup sugar, the flour, baking powder, and salt — mix together. Pour the batter evenly over the apple slices.
4. Bake for one hour at 350 degrees.
5. Serve warm (or could serve at room temperature)
6. Spread Caramel sauce on bottom of plate, top with a portion of warm cobbler, and top with a scoop of ice cream.
